Overview

Les Lunes is known for its appreciation of classic wine styles, but with a natural twist. We're thrilled to introduce their old-school Cabernet Sauvignon from Sonoma County. With a modest 12.5% alcohol content, this wine showcases the beautiful fruit potential of Cabernet when bottled young. It's a fresh take with less aging, making it perfect for the table.

The Blend

  • Varieties: 93% Cabernet Sauvignon, 7% Merlot
  • Production: 1041 cases

Vineyards

  • Stone Barn & Locke Vineyards: Located just outside Sonoma city, these vineyards sit on the Huichica soil series. The deep, loamy soils and cool climate contribute to the wine’s beautiful blue fruit notes and freshness.
  • Marcheschi Vineyard: This 60-year-old, dry-farmed Cabernet Sauvignon in Alexander Valley features stony, alluvial soils that add depth and power to the wine.
  • Pyaleh Vineyard: Merlot from the heavy clay Carneros soils brings weight and balance to the mid-palate.

Farming Practices

Les Lunes takes pride in farming all their vineyard sites organically and practicing regenerative agriculture, ensuring that every bottle is as sustainable as it is delicious.

Vinification

Each vineyard's grapes are harvested and fermented separately at optimal ripeness. They ferment at cool temperatures with 100% de-stemming. The lots are pressed at dryness (typically 10-14 days) and aged for 10 months in barrel and tank. The wine is then racked off the fine lees and blended before bottling without fining or filtering. A modest 18ppm of SO2 is added prior to bottling.

Les Lunes Sonoma Valley Cabernet Sauvignon 2022 pairs wonderfully with flavorful Chinese dishes. The bold and complex flavors of Bordeaux blends make a perfect match for:

  • Peking Duck: The rich, succulent meat and sweet-savory hoisin sauce complement the wine’s tannins and fruit notes.
  • Spicy Sichuan Dishes: Kung Pao Chicken or Mapo Tofu are excellent options. Their bold, spicy, and rich flavors pair beautifully with this full-bodied wine.
