Classic, dependable. A bit of tannin and structure making a nice fit for a summer BBQ or steak night.

Located in the Chianti Classico commune of Castellina, this Castellare offering is comprised primarily of the local Sangiovese grape, Sangioveto. Research begun in the late 1970s allowed Castellare to isolate this clone and enabled the winery to make this very unique style of a Tuscan classic.  A bright ruby red in color, this Chianti Classico shows well-integrated aromas of tart red cherries, tobacco, sunbaked earth, and a hint of cedar spice. On the palate, firm structure and refreshing acidity make it a very versatile food wine. - Castellare website

The Castellare property, located in Tuscany’s Castellina in Chianti, has become a virtual refuge for wildlife, including many of the birds pictured on their labels. With each vintage, the Castellare label shows a different bird, symbolizing the estate’s commitment to environmentally sound cultivation. The birds selected for the labels are among the rarest creatures in Chianti, and represent birds threatened by extinction, mostly due to synthetic chemical products and hunting, both of which are forbidden on this property. - Winebow website

Just for Fun

One classic dish that is popular in the region is "Pappardelle al Cinghiale," which is a pasta dish made with wide, flat noodles and a rich sauce of slow-cooked wild boar. The dish is typically seasoned with garlic, rosemary, and other herbs, and pairs well with a full-bodied red wine like Chianti Classico. Other classic dishes from the region that pair well with red wine include "Bistecca alla Fiorentina," a grilled T-bone steak seasoned with salt, pepper, and olive oil, and "Risotto alla Toscana," a creamy risotto made with Parmesan cheese and local vegetables like mushrooms and asparagus.
