Overview: Les Lunes has always appreciated the throw-back wine, but with a natural approach. We’re excited to offer an old-school Cabernet Sauvignon from Sonoma County, clocking in at only 12.5% from our farmed vineyards throughout the county. A fresher take with less aging, this wine shows the beautiful fruit potential from Cabernet when bottled younger. Vineyards Stone Barn & Locke Vineyards: Located just outside the city of Sonoma. On the Huichica soil series, these deep, loamy soils paired with the cool climate, lend to beautiful blue fruit and freshness. Marcheschi Vineyard: 60 y/o dry farmed Cabernet Sauvignon in Alexander Valley on stony, alluvial soils give an aspect of depth and power to the wine. Pyaleh Vineyard: Merlot from the heavy clay Carneros soils gives weight and balance to the mid-palate.

Farming Les Lunes farms all of the sites that go into this wine. Strictly organic and practicing regeneratively.

Vinification The grapes from each vineyard are harvested and fermented separately at optimal ripeness and fermented at cool temperatures with 100% de-stemming. The lots are pressed at dryness (typically 10-14 days) and is aged for 10 months in barrel and tank at which point the wine is racked off the fine lees and blended before bottling without fining nor filtering. 18ppm SO2 added prior to bottling.

Bordeaux blends are often bold and complex, which makes them a good match for flavorful Chinese dishes. One classic Chinese dish that pairs well with Bordeaux is Peking duck. The rich, succulent meat of the duck, along with the sweet and savory hoisin sauce, pairs well with the tannins and fruit notes in Bordeaux blends. Another option is spicy Sichuan-style dishes like Kung Pao Chicken or Mapo Tofu. These dishes are bold, spicy, and rich, which matches the full-bodied and complex flavors of the wine.
